One Pot Lemon Basil Pasta

For some reason my coffee bar has become my little herb bar.  May have something to do with Spring.  Whatever the reasoning, my house smells very fragrant.  I totally love the smell of Basil.  And when Lemon and Basil come together, something wonderful just happens.

Another wonderful thing is this whole “One Pot Wonder” thing going around on my Pinterest Board.  I totally love the idea of cooking something using only one pot.  Less mess, less dishes, more happy….Me!  I actually made this Lemon Basil Pasta once before, however how it became one pot was by total accident.  I didn’t add enough water to the pot but I worked with it anyway and it was really good.  So, I decided to give it another go around as an actual “One Pot Wonder” dish.

Start off by placing a package of Fettuccine in a stock pot.  Add 2 smash garlic cloves and 2 cups of water and 3 cups of Chicken Broth.  Turn the heat on high until the broth comes to a boil.  Be sure to move the pasta around until it is all submerged in the broth.  Once it comes to a boil, turn the heat down to medium and stir occasionally for about 8-10 minutes.

Chop up about 1-2 tablespoons each of Parsley and Basil, and toss into the pot.  Add the zest of 1 lemon and squeeze the juice of half of the lemon.  Sprinkle in 2 tablespoons of grated Parmesan Cheese and season with a little salt and pepper.

And that’s it.  I’d say it’s pretty quick and easy.  Delicious too!  Until next time…

One Pot Lemon Basil Pasta

1 Package Fettuccine Noodles
2 Cups Water
3 Cups Chicken Broth
2 Cloves Garlic, smashed
2 Tbsp Basil, chopped
2 Tbsp Parsley, chopped
1 Zest of Lemon
Juice of 1/2 a Lemon
2 Tbsp Grated Parmesan Cheese

-Place the entire package of pasta, smashed garlic, water, and chicken stock in a stock pot.
-Turn the heat to high until the liquid boils.
-Stir the pasta around until it is all submerged in the broth.
-Turn the temperature down to medium and stir occasionally.
-In about 8 minutes, the pasta should be done and there should be a little bit of liquid left.
-Turn the heat off.
-Add the Basil, Parsley, Lemon Zest, Lemon Juice, Parmesan Cheese, a pinch of Salt and a pinch of pepper.
-Toss until all combined.
