Flaky Pizza Pockets

Location: San Diego, CA

This inspiration came from The Pioneer Woman.  Only her version uses pizza dough, and I use Puff Pastry.  It’s quick, it’s simple, and you can freeze it.  What more could you ask for?  Well, I’m sure a lot more, but let’s just go with it here.

You know how I like to gather them ingredients… so gather the ingredients: Puff Pastry, Mozzarella or Pizza Blend shredded cheese, Ham or whatever ingredients you want in it, Marinara Sauce… you know the one I made here?  Oh so handy am I!!! And can’t forget the egg wash.

Preheat the oven to 400ºF, lay out the Puff Pastry and slice it into 6 equal parts per roll.  Prick some holes in the dough (I used a fork and just went poke happy).  Next place about 1 1/2 tablespoons of Marinara Sauce  on the dough.  Be sure to leave space around the perimeter. 

Then we go on with the cheese.  I’d say about 1 1/2 tablespoons as well.  See those orange specs on there?  Those are grated carrots.  My little attempt at sneaking in some Vitamin A for the little one. Next layer on the ingredients.  Be sure not to over layer because you won’t be able to seal this shut.

Once you’re done with your toppings, fold the empty half of the Puff Pastry over the used one.  Using a fork, crimp the edges of the Puff Pastry together so that the Pizza Pocket is sealed. 

Glaze the top half of the Puff Pastry with the egg wash and lay on a foil lined or non-stick cookie sheet. If you’re going to freeze the Pizza Pockets, then freeze them as they are on the  cookie sheet for about 15 minutes then place in a freezer bag.  When you’re ready to bake them, defrost for up to 45 minutes then proceed with the regular baking directions.

Place in the oven for 15 minutes or until golden brown.  Make sure you let the Pizza Pockets sit for a few minutes because it will be steaming hot!  Take it from me.  My mouth is still recovering.  Until next time….

1 pkg Puff Pastry
1/2 C Marinara Sauce
1/2 C Mozzarella or Pizza Blend shredded cheese
6 Tsp Diced Ham
Egg Wash (1 Egg & 1 Tsp Water)

-Preheat the oven to 400ºF.
-Lay the Puff Pastry out and slice into 6 equal parts per roll.
-Poke some holes throughout the dough.
-Layer about 1 1/2 Tbsp of Marinara Sauce over 6 of the slices.
-Sprinkle about 1 1/2 Tbsp of grated cheese over those slices.
-Place about 1 Tsp of diced ham over those slices.
-Place the empty half of the Puff Pastry over the used slice.
-Using a fork, pinch the edges down to seal the Pizza Pocket.
-Brush the egg wash all over the top of the Pizza Pocket.
-Lay 3 Pizza Pockets per foil lined or non-stick cookie sheet.
-Bake for 15 minutes or until golden brown.
-Let sit for 2 minutes before eating.
