Grilled Cheese Pizzas

On today’s menu…. Meat Loaf Grilled Cheese Pizzas.  So I have a few lessons for you on today’s post.  First one is – Just go with it.  Sometimes in life, things don’t work out the way you want them to and you just have to move on.  It was a pretty rough week last week and sometimes when things in life are rough, you just want some comfort food.  Meat Loaf was it for me.  Well, the ground beef went bad, so there went that idea.  Second lesson is – when you have the idea, do it then.  Don’t wait (unless it’s going to harm you or others).  I thought about making Meat Loaf the night before, but didn’t.  So all of that brings me to today’s post.  It’s all about the Grilled Cheese Pizzas.  Ones of my husband’s childhood favorites. Oh. Now that third lesson – don’t sneak a bite of your husband’s sandwich…. the roof of my mouth is now blistering!

Pizza Blend Cheese – Kroger, Marinara Sauce – Home Made, Butter – Earth Balance, 12 Grain Wheat Bread -Orowheat

Here are all of the ingredients – Pizza Blend Cheese or Mozzarella, Marinara Sauce (High 5 to me because I made it myself!), Butter, and Bread.  The choice of bread is up to you and any jarred Marinara or Pizza Sauce is fine.  I just got domestic and made my own.  If you stick around, you might score and I’ll post a recipe 😜.


Spread butter on the outside of each bread slice and place on a pan, butter side down.


Spread the Marinara Sauce on slice of Bread that’s on the pan.  Add a layer of cheese (the amount depends on how cheesy or not cheesy you like it), add another layer of the Marinara Sauce, and then the other slice of Bread (Buttered side up).


Now the tricky part – letting the Cheese melt without burning the Bread.  I find that medium to medium-low heat for about 5 minutes each side works.  When the cheese if melted, you’re done.


Cut the sandwich in half, leave it whole… whatever makes you happy.  Grab a glass of wine (because we’re classy like that), and head outside to a nice fire…. because we’re en fuego!  Until next time…

Grilled Cheese Pizzas

2 Slices of Bread
2 Tsp Butter
4 Tbsp Marinara Sauce
4 Tbsp Pizza Blend Cheese

-Heat a pan on medium to medium-low heat.
-Spread 1 Tsp butter on the outside of each bread slice.
-Place a slice of bread, butter side down, on the preheated pan.
-Spread 2 Tbsp Marinara Sauce on the slice of bread on the pan.
-Sprinkle all the Cheese on top of the Marina Sauce.
-Add another layer of Marinara Sauce on top of the Cheese.
-Place the other slice of Bread on top, buttered side up.
-In about 5 minutes, once the cheese melts, flip the sandwich.
-Let cook for about another 5 minutes, or until the bread is toasted and the cheese is completely melted.
